Orange Almond Cake (GF, DF, Grain Free)

This Orange Almond Cake is surprisingly easy and is made with just 6 simple ingredients. It can be made to be free from sugar and is naturally free from gluten and dairy, so it’s the perfect warm weather dessert to serve at any gathering.

Orange Almond Cake

This cake is a hit among my chocolate loving family and friends, which says a lot, in my opinion. Everyone agrees it’s absolutely delicious and they were shocked when I told them that it can be made completely sugar free!

What you’ll need:

  • Eggs
  • Monk Fruit or White Sugar
  • Almond Flour
  • Baking Powder
  • Oranges
  • Olive Oil

I love to add my Vanilla Butter Cream recipe with this (click here!) or you can opt to dust it with powdered sugar.

Ingredients Equipment Method

Ingredients
  

  • 4 eggs, yolks and whites separated, at room temp
  • ¾ cup white sugar (can sub monk fruit for sugar free)
  • 2 tbsp extra virgin olive oil
  • 1 ½ cup almond flour
  • 1 tbsp baking powder (I use Otto's for paleo)
  • 2 tbsp orange zest
  • 1 tbsp orange juice, fresh

Equipment

  • Hand Mixer
  • Zester
  • Circular Baking Pan(s)

Method
 

  1. Preheat your oven to 350℉ and line the bottom of a circular baking pan with parchment paper. This is a must or else the cake could stick! You can also opt to grease the edges of the pan if you’d like.
  2. In a bowl, combine egg yolks and sugar by using a hand mixer and mixing on high for 2 minutes. The mixture should become thick and creamy.
  3. Then, beat in orange zest, orange juice and olive oil until just combined.
  4. In a separate bowl, whisk together almond flour and baking powder. Once combined, use a spoon to mix it together with the sugar/egg yolk mixture.
  5. Wash and dry your mixer attachments, then in a separate bowl beat egg whites until stiff peaks form.
  6. Carefully fold in the egg whites to the almond flour batter one heaping spoonful at a time. Do this step gently, and be sure to fold the batter until no white streaks remain.
  7. Spread the batter into the baking pan and bake for 25-30 minutes or until golden and a toothpick comes out clean.
  8. Once finished, allow the cake to cool to room temperature, then run a knife around the edge of the cake to help remove it from the pan.
  9. Garnish the cake with a sprinkle of powdered sugar and slivered almonds or frost with vanilla buttercream.

    Does this recipe make one or two round cakes? In the photos the cake has two layers but the recipe says to only line one pan? 😊 looks delicious and I would love to make it.
