Lately I’ve been making cold brew with Vanilla Coconut Creamer and it’s so good that I want to replace all my meals with it. Is that weird?

This Vanilla Coconut Creamer is not only super easy to make, but it is lightly sweetened and completely dairy free! You can even make it Whole30 compliant by leaving out the honey or maple syrup.

Have it Your Way

Fill your favorite glass with cold brew then froth up the Vanilla Coconut Creamer to add on top or pour it over your cold brew over ice. I love them both so much that I can’t decide which way is my favorite way to enjoy it!

PS – You can also enjoy this creamer in warm coffee, add cinnamon, pair with espresso, etc. The options are truly endless!

Tips & Tricks

  • I have found that the full fat coconut milk hardens when refrigerated while the light coconut milk does not. If you do use full fat coconut milk, all you need to do to get rid of any hardened pieces is shake the can the creamer is in, the warm it slightly in the microwave or over the stove. No biggie!
  • I use a cold brew pitcher that makes the cold brew process so easy. Click here for the one I use, and save a little money using code “KAYLA10”!
  • I always add collagen to my morning coffee (grab a discount on my favorite by using code “KK&F” here!), but collagen best dissolves in warm liquids. I quickly microwave a tiny bit of the cold brew and add my collagen to that and mix with a handheld frother (save 10% on the one I use with code “KAYLA10” here!). Ingredients Method

Ingredients
  

  • 1 14 oz can coconut milk
  • 2 tbsp honey or pure maple syrup (leave out if Whole30)
  • 1 ½ tsp vanilla extract
  • pinch sea salt (optional)

Method
 

  1. Combine ingredients in a pot on the stove over medium heat and stir together until smooth.
  2. Let sit on the heat for a minute or two while continuing to stir.
  3. Remove from heat and cover with a lid for a few minutes, then transfer into a jar to store in the fridge.
  4. Wait until cool to use. I love it in my cold brew over ice or frothed and poured into cold brew without ice!

    My favorite thing to add to my coffee whether on whole 30 or not! I normally like my coffee with some vanilla so this was a really great way to add in a healthier, less sugary way!

      I think coconut cream would make it too thick! I use canned coconut milk.
