Mini Crispy Smashed Potatoes

August 18, 2020 by kaylaskitchandfix 8 Comments

My new favorite side dish would have to be these Mini Crispy Smashed Potatoes. They’re Whole30 and paleo friendly while also dairy free and vegan compliant. They pair perfectly with chicken or steak and your favorite veggies and make for a great appetizer as well.

When I made these for the first time, my fiancé quite literally got off of his work call to tell me how good they were and that he couldn’t believe they were Whole30.

That’s the thing about the Whole30 program that I think a lot of people get mixed up. Just because you are eliminating certain foods from your diet, it doesn’t mean you aren’t able to eat delicious meals! I find it such a fun challenge to recreate my favorite recipes and make them using Whole30 compliant ingredients and sharing them with the world.

Prep Time 10 minutes mins
Cook Time 45 minutes mins
Total Time 55 minutes mins
Servings: 6 people
Course: Appetizer, Side Dish
Ingredients Method

Ingredients

Smashed Potatoes
  • 1 bag mini potatoes (I used 16 oz multicolored peewee potatoes, from Whole Foods)
  • 1 tbsp avocado oil or olive oil
  • 1 tbsp ghee (can sub avocado oil or olive oil for dairy free)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 ¼ tsp tsp salt
  • chives, parsley & chopped bacon to garnish (optional)
Garlic & Chive Aioli (optional)
  • ⅓ cup avocado mayo (I use Primal Kitchen or Chosen Foods)
  • squeeze lemon
  • ½ tsp garlic powder
  • 2 tsp fresh chives, chopped
  • salt, to taste

Method

  1. Preheat oven to 425° and line a baking sheet with parchment paper.
  2. Place cleaned potatoes into a large pot and cover with water. Add ¼ tsp of salt to the water and bring to medium heat.
  3. Bring the water to a boil and cook until fork tender, which should be about 20 minutes.
  4. Drain potatoes and allow to cool to the touch, about 5 minutes. Once cool enough, transfer potatoes to the sheet, spaced apart.
  5. Using a spatula or bottom of a glass/jar, smash the potatoes. The thinner, the crispier!
  6. Drizzle avocado oil and melted ghee (if using) over top of the potatoes and then add the seasonings, ensuring the potatoes are evenly covered.
  7. Cook for 25 minutes or until crispy. Allow to cool, then top with fresh herbs and chopped bacon, if you'd like. Drizzle with homemade ranch or dip into Garlic and Chive Aioli!

Thank you so much for making and commenting, Larissa! 🙂 I love that you loved these and also that you subbed in the herbs that you had on hand! Heating leftovers in the airfryer is a game changer, I love doing that too!! Thanks again!

I would like to use an air fryer instead of an oven. how should I adjust the cook time and temp?

Hi Jax, I actually don’t have an air fryer! I’m sure you could Google the oven to air fryer temp and time conversions though? Let me know if you give that a try!

I was a little worried with these because I think I slightly over boiled them, and then we used a fork to smash them (bad idea – use a measuring cup instead). However, we baked them for a bit and then finished in the air fryer at 450 because I wanted them crispy and they were PHENOMENAL! Doing Whole30 this month and these felt like a cheat. These will be a regular for dinners and a must on game day.

Oh my gosh, these save my Whole30s! I’m so glad they worked out for you! Yes, definitely use a jar if you can to smash the potatoes, makes it much easier!
