Mediterranean Inspired Grilled Chicken
Ingredients
- 1 ½ lbs chicken breast
- ¼ cup avocado oil or extra virgin olive oil
- 1 lemon, juice of
- 4 cloves garlic, minced
- 1 tbsp dried oregano
- salt and pepper, to taste
Instructions
- Mix all marinade ingredients in a bowl large enough to add the chicken.
- Cube the chicken, place in the bowl and cover with the marinade.
- Allow to sit for at least 30 minutes in the fridge. If you are in a rush, you can skip this step.
- Cook chicken on the stove in a pan or grill pan. Be sure to pour all of the marinade into the pan with the chicken.
- Once browned on all sides and cooked through, serve chicken however you'd like (alone, on salad, in a bowl, etc.)!
