These fluffy waffles and crispy chicken are both made with real, better for you ingredients and have options to fit your sweet or savory preference. It can also easily be made Whole30 by making my Sweet Potato Waffles and by not using honey or maple syrup!

Make it Your Own

Whether you like sweet or savory breakfasts, I’ve got you covered. If your sweet tooth is superior, try this dish with pure maple syrup. The touch of sweetness paired with the crispy chicken and fluffy waffles is a match made in brunch heaven!

For my savory lovers, try mixing up equal parts honey and hot sauce to make a unexpectedly tasty hot honey sauce that pairs amazing with this dish. I also like to put a savory twist on the Chicken & Waffle by throwing some fresh thyme and rosemary in my skillet while cooking the chicken to add a flavorful herb-y element. It’s a must try and perfect for the cooler months of the year! You can also serve on the savory side with fresh arugula or even pickles! The options are endless and all super delicious.

Why cassava flour?

While mixtures of almond flour and coconut flour are great ways to bread chicken while keeping recipes both gluten and grain free, they can sometimes turn out a bit on the grainier side. While I don’t always mind it since it still tastes delicious, I do prefer the result of breading chicken with cassava flour instead!

Not all cassava flours are created equal. Some are grainy while others are super high quality. Ingredients
  

Fried Chicken
  • 2 lbs chicken I used tender shapes which worked great
  • 1 egg
  • ½ cup milk I used coconut
  • 1 cup cassava flour I use Otto's
  • 1 tsp paprika
  • 1 tbsp garlic salt
  • 1 tbsp onion powder
  • 2 tbsp avocado oil can use more if needed
Grain Free Waffles
  • 1 cup cassava flour I use Otto's, you can get 15% off with code "kaylaskitchandfix"
  • 2 scoops collagen I use Further Food, you can get 5% off with code "KK&F" or sub favorite protein powder or 2 tbsp flour
  • ½ tsp baking soda
  • 3 tbsp monk fruit sweetener or sugar of choice I use Lakanto
  • 3 tbsp avocado oil
  • 1 cup almond milk or water I use MALK Organics almond milk
  • 1 egg
  • additional oil for greasing your iron
Optional Toppings
  • Arugula
  • Pickles
  • Green onions
  • Hot honey (1 tbsp honey + 1 tsp hot sauce)
  • Maple syrup
  • Ghee/butter

Equipment

  • Waffle Iron

Method
 

Fried Chicken
  1. Whisk egg and milk together in a large bowl. Place all of your chicken into the bowl, ensuring it is all covered. Place the bowl in the fridge for at least 1 hour.
  2. While you wait, feel free to make your waffles and set aside. You can also prep your toppings.
  3. Heat a pan on the stove over medium heat with avocado oil for about five minutes or until warm.
  4. While the pan is heating, mix together cassava flour, paprika, garlic salt and onion powder in a large bowl and place next to the stove.
  5. Remove the chicken from the refrigerator and place the bowl next to the cassava flour mixture.
  6. Piece by piece, move chicken from the milk to the flour using a fork and cover completely.
  7. Carefully transfer the chicken to the stove and cook for 5-7 minutes on each side. Tip: if the bottom of your pan is coated in excess flour after cooking a batch, clean out pan and start the oil heating step again to achieve clean, not burnt chicken.
  8. Move the chicken to a drying rack and let cool so that the coating is less likely to fall off.
  9. Assemble your chicken & waffles with your toppings of choice and enjoy!
Grain Free Waffles
  1. Mix together flour, collagen and baking soda. If not using collagen, you can swap it for your favorite protein powder or 2 tbsp of additional cassava flour.
  2. In the same bowl, mix in the remaining ingredients until completely combined.
  3. Heat and grease your waffle iron and bake! Makes 2-3 large waffles.

    I could eat these FOREVER! So so good and the perfect meal for Breakfast, lunch or dinner! I should have listened and put the chicken in the egg mixture for an hour, but I was a little impatient. It caused the breading to come off a little, but it was still so so good.

      So glad you love this recipe, Emily! Another trick to helping the breading stay on is to ensure you’re using enough oil in your skillet/pan!

    OKAY i expect all of kayla’s recipes to be amazing because they never let me down but this one was NEXT LEVEL! i haven’t had crispy chicken like this pretty much since i became gluten free. i brought this as an app to a happy hour and cut them into smaller pieces to make it bite size and everyone was raving about it. the plate was empty within like 30 minutes!! i can’t wait to make it again 🙂

    This crispy chicken is so easy to make and sooo good! Chicken was very moist. Making this recipe second time in 3 days! The whole family loved it , husband was so satisfied with it he kept on saying at least 7x throughout dinner how good it was! Great recipe Kayla!
