You know when you go out to breakfast and get a stack of your favorite pancakes or waffles and find yourself needing a nap the second you get home? That’s happened to me too many times than I can count. I’m such a sweet breakfast person. Don’t get me wrong, I love all things savory as well, but my sweet tooth always wins.
That’s why I wanted to create a sugar and grain free version of my favorite breakfast items that I can make for myself at home. I know I’m not alone in this, so I’m so excited to share the recipe with you! They’re made in one bowl so there’s minimal mess or effort needed, making them the perfect staple for a weekend you’d like to check a lot off of your to do list.

To top it off, I’ll mix equal parts honey and hot sauce to make a unexpectedly tasty hot honey sauce that pairs amazing with this dish. I also like to put a savory twist on the Chicken & Waffle by throwing some fresh thyme and rosemary in my skillet while cooking the chicken to add a flavorful herb-y element. It’s a must try and perfect for the cooler months of the year!
In terms of substitutions, if you’re a vegetarian and looking to swap out the collagen in the recipe, sub in 2 tablespoons cassava flour or simply use your favorite protein powder instead. Simple!

Grain Free Waffles
Equipment
- Waffle Iron
Ingredients
- 1 cup cassava flour I use Otto's, you can get 15% off with code "kaylaskitchandfix"
- 2 scoops collagen I use Further Food, you can get 5% off with code "KK&F" or sub favorite protein powder or 2 tbsp flour
- ½ tsp baking soda
- 3 tbsp monk fruit sweetener or sugar of choice I use Lakanto
- 3 tbsp avocado oil
- 1 cup almond milk or water I use MALK Organics almond milk
- 1 egg
- additional oil for greasing your iron
Instructions
- Mix together flour, collagen and baking soda. If not using collagen, you can swap it for your favorite protein powder or 2 tbsp of additional cassava flour.
- In the same bowl, mix in the remaining ingredients until completely combined.
- Heat and grease your waffle iron and bake! Makes 2-3 large waffles.
