Gluten & Grain Free Fried Green Tomatoes

This easy recipe is one that you might not have known you needed. It uses firm green tomatoes that pack a fresh and light taste while giving you a satisfying crunch from the crispy cassava flour coating. Not only are they tasty, but they’re also free from grain, gluten, dairy and added sugars so they fit right into a paleo or Whole30 diet.

How to enjoy them

These crispy yet light and fresh circles are great all on their own, but they’re also fun to eat by dipping in sauce as an appetizer or by adding some flare to your tomato slice on your burger or sandwich. They even make for a fun salad topping!

Gluten & Grain Free Fried Green Tomatoes

Ingredients Method Notes

Ingredients
  

  • 3 firm green tomatoes
  • ½ cup avocado oil or olive oil
  • 2 eggs
  • ¼ cup milk (I use coconut milk)
  • ½ cup cassava flour (I use Otto's Naturals)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • fresh basil, to top (Optional)
  • aioli, to serve (Optional)

Method
 

  1. Wash, dry and slice your tomatoes about ¼ in thick.
  2. Heat avocado oil or olive oil in a pan on the stove over medium to low heat until warm. You'll want to oil to be warmed up before you start to fry the tomatoes!
  3. Whisk together egg and coconut milk in one bowl and the cassava flour with the seasonings in another.
  4. Once the oil is hot, dip each tomato slice in the egg and milk mixture, ensuring to cover each side, then move to the flour mixture.
  5. After completely coating the tomato entire slice in the flour, add it to the heated pan. It should sizzle!
  6. Cook each side until browned (about 3-5 minutes) and repeat with all of the tomatoes.
  7. Serve warm with aioli/sauce for dipping, in your favorite sandwich/burger or over a salad!

Notes

For best results, reheat leftovers in an air fryer, oven or conventional toaster oven.
