Gluten Free Brunch Flatbreads
Ingredients
Crust
- 2 egg whites
- 2 cups almond flour
- 1 tsp onion powder
- 1 tsp garlic powder
Toppings
- shredded mozzarella
- 1 tbsp melted ghee or olive oil
- chopped onion
- chopped artichoke heart
- prosciutto
- brussels sprouts
- cracked black pepper
- minced garlic
Instructions
- Preheat oven to 325° and line a baking sheet with parchment paper.
- Combine almond flour, egg whites and seasonings and combine until fully mixed. The dough should start to form into balls.
- Use your hands to form the dough into a ball, then separate into even fourths.
- Form the dough into heart shapes or circles and place on the lined sheet.
- Bake for 10 minutes, then remove from the oven and turn to broil at 500 degrees.
- Spread the ghee or olive oil and garlic evenly over each flatbread. This acts as the sauce.
- Assemble the flatbreads with your toppings. I added half of the cheese first, then the rest of the toppings, then used the rest of the cheese over the top.
- Broil for 5 minutes then remove from the oven and top with cracked black pepper.
