I am a side of fries girl through and through, and these Crispy Lemon Greek Fries are my favorite addition to any meal. They are flavorful and actually have that crunchy texture that you would expect at a restaurant. They pair perfectly with any Mediterranean inspired dish and are a fun way to change up the classic fry.

This recipe was made to help you create those ACTUALLY crispy french fries we all love to get at restaurants from the comfort of your own home! CARBS ARE NOT THE ENEMY
People tend to be afraid of potatoes, but in reality, they’re totally healthy in moderation. They’re packed with vitamins/nutrients and antioxidants and can even improve digestive health. The most important thing to consider when eating potatoes is how they were cooked. Were they fried in canola oil? Try to avoid that inflammatory situation. Were they cooked in a natural oil or oven roasted, like these? Dig in!
HERE’S A LITTLE SECRET…
The best trick I have for you to get the outside of your french fries crispy in the oven is to soak the potatoes in cold water for 30 minutes after you cut them. Why? This process helps to remove the potato starch and in turn helps get them crispier in the oven!
Another tip for when you’re reheating leftovers would be to pop them into a conventional toaster oven, air fryer or even your big ol’ oven to crisp them as they heat up instead of just warming them in the microwave.

Crispy Lemon Greek Fries
Ingredients
- 2 lbs golden potatoes
- 1 tbsp olive oil
- squeeze of fresh lemon, to taste
- 2 tsp dried dill
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 clove garlic, minced
- ½ tsp salt
- pepper, to taste
Instructions
- Wash and dry potatoes, then slice potatoes into fries while leaving the skin on. The skin is high in fiber and super good for you!
- Soak fries in cold water for at least 30 minutes. This step helps to remove potato starch and gets your fries crispy, but is totally optional!
- Preheat your oven to 400° F and line a baking sheet with parchment paper.
- Once soaked, drain and dry your fries, then transfer to a dry bowl.
- Top with avocado oil or olive oil, lemon, spices, salt and pepper then mix together. Feel free to add any other spices you like at this time and adjust measurements as needed!
- Line the fries in a single layer on the sheet ensuring that none of the fries are overlapping.
- Cook for 40 minutes, checking on them towards the end of the bake time to see if they need to be removed early or if they should bake longer. Depending on the thickness of your fries as well as your oven, bake time can differ!
- If you want your fries even crispier after that, feel free to broil them for a few minutes, but be sure to keep an eye on them!
- I like to serve mine with homemade tzatziki. Enjoy!
