This Cinnamon Roll Latte is made using easy yet flavorful homemade cinnamon syrup, your favorite freshly brewed coffee and cloud-like vanilla milk! It’s the most perfect lightly sweet yet good for you mug-full that will have you thinking you’re at your favorite cafe, even if you’re at your desk or on your couch.

Cinnamon Roll Latte
Ingredients
Homemade Cinnamon Syrup
- 1 tbsp vanilla extract
- 4 cinnamon sticks
- 1 cup water
- 1 cup coconut sugar (can sub regular brown sugar if not paleo or brown sugar substitute for sugar free)
Cinnamon Roll Latte
- 1-2 fl oz shots espresso (⅛-¼ cup strong coffee)
- 2-4 tbsp cinnamon syrup
- ½ cup unsweetened vanilla almond milk
Garnishes (Optional)
- cinnamon (recommended)
- whipped topping (I use coconut whipped cream)
- coffee salt (I like OSMO x Chamberlain Coffee)
Instructions
Homemade Cinnamon Syrup
- In a pot on the stove, combine all ingredients over medium/high heat and bring to a boil, stirring often.
- Once boiling, bring the heat down a touch and allow to simmer for 5 minutes or until the sugar is dissolved, continuing to stir.
- Once the syrup ingredients are fully combined and no sugar remains, remove the pot from heat and allow to cool completely.
- Remove the cinnamon sticks then strain the syrup into a jar with a lid and enjoy in coffee or cocktails!
Cinnamon Roll Latte
- Once your cinnamon syrup is made, brew your favorite coffee to your liking.
- Add cinnamon syrup and coffee to a mug.
- Heat almond milk in the microwave for 45 seconds, then froth until fluffy.
- Pour the frothed milk overtop of the coffee and syrup, then garnish to your liking.

How long can I keep the syrup for before it spoils?

As long as it’s stored properly in an airtight container, it should be good for 2 weeks-1 month in the fridge!
