I cannot get enough of my Cassava Flour Breaded Chicken. I have used the recipe to make Chicken Tenders, Chicken Milanese and the perfect addition to salads of all kinds. Now, I bring you the Cassava Flour Fried Chicken “Unwich,” aka a sandwich with lettuce in place of the bun, with Honey Mustard Coleslaw.
Honey Mustard or Classic? Decisions, decisions…
The Honey Mustard Coleslaw adds the perfect touch of sweet to pair with the savory. But just in case you are watching your sugar intake, are in the middle of a round of Whole30 or maybe you just like to stick to the basics, I created a Classic Coleslaw recipe so you don’t have to miss out on any of the fun. Honey Mustard Coleslaw
Ingredients
- 1 bag shredded purple cabbage, green cabbage and carrots (I find mine at Trader Joe's)
- ½ cup compliant mayo (I use Primal Kitchen Foods)
- 2 tsp apple cider vinegar
- 1 tbsp dijon mustard
- 2 tbsp honey
- squeeze of fresh lemon
- salt and pepper
Instructions
- Combine all wet ingredients together then pour over shredded cabbage and carrots mixture in a big bowl.
- Mix thoroughly until covered evenly and top with a generous amount of black cracked pepper.
Classic Coleslaw
Ingredients
- 1 bag shredded coleslaw mix
- ⅔ cup avocado mayo (I use Primal Kitchen or Chosen Foods, can sub Greek yogurt or mayo of choice)
- 2 tsp apple cider vinegar
- 2 tsp compliant mustard
- squeeze of fresh lemon
- salt and pepper
Instructions
- Combine all wet ingredients together then pour over shredded coleslaw mix in a big bowl.
- Mix thoroughly until covered evenly and top with a generous amount of black cracked pepper.
