This Buffalo Ranch Burrito Bowl is the healthier, more fueling version of my favorite college go-to late night bite.
When I fall into a funk of not wanting to cook, I think back on foods I loved in the past, whether that be something I was served at a loved one’s house or even my go-to late night college snack. We’re covering the latter option here as I can’t get enough of my post-grad version of my favorite burrito bowl.
Buffalo Ranch Burrito Bowl
What you’ll need:
- White Rice
- Shredded Lettuce
- Shredded or Cubed Chicken
- Buffalo Sauce or Hot Sauce
- Diced Onion
- Ranch (click here for my recipe!)
- Tortilla Chips (click here for my recipe!)
- + anything else you prefer
You can also adjust this recipe to be compliant to various diet types and dietary needs by omitting recipe, subbing chickpeas, etc. Make it work for you!
How to Make Your Bowl
It’s simple really! A no recipe recipe, if you will. Plus, be sure to customize all of the ingredients to meet your needs, tastes, hunger levels, etc.
- Prep:
- Cook and shred your chicken, then toss in buffalo sauce
- Cook your rice
- Chop lettuce & onion
- Make ranch
- Make tortilla chips (optional)
- Assemble everything in a bowl
- Dig in!!!
It’s so easy to whip up in just 15 minutes and then you have leftovers for the rest of the week. I’ve been loving it so much that I don’t even mind eating it cold. It’s too easy to be this good, yet here we are!

Homemade Ranch
Ranch is VERY important to me as it is to everyone in my family. I have been told by so many people that once they made this recipe, they’ve never had another ranch! It’s a favorite for good reason!
