Buffalo Chickpea Stuffed Sweet Potatoes
This easy recipe requires just a little bit of prep then most of the recipe time is spent baking the sweet potatoes in the oven. I love a healthy and low effort recipe that the whole family will love. I shared these with my husband, who might I add does not like sweet potatoes, and he loved these! I also shared them with my grandma who said they were the best sweet potatoes she’s ever had!

MAKE THEM YOUR OWN!
Use whatever buffalo or hot sauce you have on hand or can find in the store. Just be sure to check the ingredients to avoid added sugars, dairy or inflammatory oils if those are things you pay attention to. If you prefer chicken, you can opt to use shredded chicken instead of chickpeas as well, which would make this recipe Whole30 & paleo compliant, but not vegan or vegetarian, of course.

Buffalo Chickpea Stuffed Sweet Potatoes
Ingredients
Buffalo Chickpea Stuffed Sweet Potatoes
- 5 sweet potatoes (you can use fewer sweet potatoes if you want extra chickpeas for each serving)
- 1 15 oz can chickpeas, rinsed and drained
- ⅓ cup buffalo sauce (double check for dairy free and no added sugars, I like The New Primal brand)
- 1 tbsp olive oil
- garlic powder & onion powder, to taste (optional)
Toppings (Optional)
- diced celery
- ranch dressing (my recipe linked above in this blog post)
Instructions
- Preheat your oven to 425°.
- Line sweet potatoes on a baking sheet with parchment paper. Poke the top of each sweet potato a few times with a fork.
- Bake the sweet potatoes for 45 minutes.
- When your sweet potatoes have 15 minutes left of bake time, add olive oil, buffalo sauce or hot sauce and the drained and rinsed chickpeas to a skillet over medium heat. You can also add any desired spices here, like garlic powder and onion powder, for more flavor if you’d like.
- Sauté chickpeas for 10 minutes, stirring often.
- Remove the chickpeas from the heat and take the sweet potatoes out of the oven.
- When the sweet potatoes are cool to the touch, slice each one to form an opening for the chickpeas, but not cutting all the way through.
- Fill the sweet potatoes with chickpeas, top with your favorite ranch dressing and finish them off with diced celery.
