Bacon Wrapped Water Chestnuts

Bacon Wrapped Water Chestnuts

Ingredients Method

Ingredients
  

  • 10 oz water chestnuts
  • 3 T coconut aminos
  • 1 packet Whole30 compliant bacon (I used Applegate sugar free bacon)
Sauce
  • 5 pitted dates
  • 1/3 C filtered water
  • 1/3 C Whole30 compliant ketchup (I used Primal Kitchens)
  • 2 T coconut aminos

Method
 

  1. Preheat your oven to 400 degrees.
  2. Marinate water chestnuts in 3 T coconut aminos for 30 minutes.
  3. Cut your bacon into thirds and wrap around water chestnuts, securing with a toothpick.
  4. Place a cooling rack over a rimmed baking sheet and spread out the wrapped water chestnuts on the rack.
  5. Place in the oven for 30 minutes and begin your sauce.
  6. Use a blender to blend dates and water until somewhat smooth. I still had some lumps after using my blender but it worked just fine.
  7. Combine date paste with ketchup and coconut aminos until well combined.
  8. Once done in the oven, cover the wrapped water chestnuts in the sauce by dipping into the bowl. Drain the baking sheet of any grease and return the sauce covered apps to the tray.
  9. When all of them have been covered, put back into the oven for 15 minutes. Serve warm and enjoy!
