Look no further than this Apple Spice Quinoa Breakfast Bowl! It’s nourishing and a fun way to change up your morning routine. Plus, it’s great for prepping ahead for a busy week and only takes about 15 minutes when you can squeeze it into your morning!
Apple Spice Quinoa Breakfast Bowl
I used to absolutely love oatmeal but when I found out I was allergic to gluten, I also found out I was allergic to all types of oats, even gluten free ones. Honestly? Rude. Now when I’m craving oatmeal, I make this warm and comforting Apple Spice Quinoa Breakfast Bowl. It’s packed with super foods and it satisfies my craving for the cozy breakfast I used to rely on. The perfectly fall scent from the cinnamon apples is reason enough to whip this up. It’s different and a must-try. I promise you’ll love it!
Make it your own!
I add protein to this breakfast bowl by adding collagen (which is packed with clean protein!) to my milk as it warms on the stove. I aim to incorporate collagen into my daily diet since typically in our meals these days, we don’t get the same amount of collagen our ancestors did. In our twenties our bodies start to produce less collagen, but by adding into my routine, it helps build that level back up.

Another way you can make this bowl your own is by choosing your toppings. You can add an extra pour of nut milk, a drizzle of your favorite nut butter, or add some extra plant-based protein with hemp seeds! The options are endless and the choice is yours!

Apple Spice Quinoa Breakfast Bowl
Ingredients
Quinoa
Cinnamon Apples
- 2 apples
- 1 tbsp coconut oil
- 1 tsp cinnamon
Optional Toppings
- cinnamon
- milk
- nut butter
- chia seeds
- cacao nibs
- hemp seeds
- sea salt
Instructions
- Rinse and drain quinoa then set aside.
- Warm milk of choice, water, vanilla and coconut oil on the stove until warm. Once warm, whisk in the collagen (it dissolves better in warm liquids) or protein powder until completely dissolved.
- Once boiling, add the quinoa and reduce the heat. Follow the instructions for your quinoa, but typically you’ll place a tight fitting lid on the pot and cook for about 15 minutes. Fluff with a fork once cooked, then stir in the cinnamon.
- While the quinoa cookes, prepare the apples. In a skillet over medium heat, add cubed apples, coconut oil and cinnamon to the apples and sauté until blistered.
- Add your quinoa to a bowl and top with apples and toppings of choice. I like to use a pour of almond milk, spoonful of peanut butter, sprinkle of sea salt and extra cinnamon!

Made this today. We used 1/2c oat nog 1/2c oat milk in place of the almond milk. It was so good and made enough for my kids to have leftovers for tomorrow.
