This Almond Flour Lemon Cake is surprisingly easy and healthy and is made with just 6 simple ingredients. It can be made to be free from sugar and is naturally free from gluten and dairy, so it’s the perfect warm weather dessert to serve at any gathering.
Almond Flour Lemon Cake
This cake is a hit with my chocolate loving family, which says a lot, in my opinion. Everyone agrees it’s absolutely delicious and they were shocked when I told them that it’s sugar free!
What you’ll need:
- Eggs
- Monk Fruit (can sub regular white sugar)
- Almond Flour
- Baking Powder
- Lemons
- Olive Oil

Almond Flour Lemon Cake
Equipment
- Hand Mixer
- Zester
- Circular Baking Pan
Ingredients
- 4 eggs, yolks and whites separated, at room temp
- ¾ cup monk fruit (can sub regular sugar)
- 2 tbsp extra virgin olive oil
- 1 ½ cup almond flour
- 1 tbsp baking powder (I use Otto's for paleo)
- 2 tbsp lemon zest
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350℉ and line the bottom of a circular baking pan with parchment paper. This is a must or else the cake could stick! You can also opt to grease the edges of the pan if you’d like.
- In a bowl, combine egg yolks and monk fruit or sugar by using a hand mixer and mixing on high for 2 minutes. The mixture should become thick and creamy. Then, beat in lemon zest, lemon juice and olive oil until just combined.
- In a separate bowl, whisk together almond flour and baking powder. Once combined, use a spoon to mix it together with the sugar/egg yolk mixture.
- Wash and dry your mixer attachments, then in a separate bowl beat egg whites until stiff peaks form.
- Carefully fold in the egg whites to the almond flour batter one heaping spoonful at a time. Do this step gently, and be sure to fold the batter until no white streaks remain.
- Spread the batter into the baking pan and bake for 25 minutes or until golden.
- Once finished, allow the cake to cool to room temperature, then run a knife around the edge of the cake to help remove it from the pan.
- Garnish the cake with a sprinkle of powdered sugar and slivered almonds, if desired.

I made this for my mom’s birthday this past weekend and it was a HUGE hit! It was moist and light and the lemon really came through, everyone asked for the recipe afterwards. We also may have eaten it for breakfast the next morning 🙂 oops! That’s the sign of a real winner.

I made it last night and it’s so delicious! Even better when I had it this morning with some Greek yogurt😋 I’m wondering if I can make this again with some blueberries? And if that needs any adjustments?

Could you substitute canola oil for olive oil since there has been some recent controversy about heating olive oil to high temperatures?

I have never worked with canola oil as I don’t include it in my diet, so I cannot speak to that.

I’m not sure! It may give a more caramel or brown sugar type flavor which isn’t exactly the goal in this recipe. I’d sub regular sugar if needed!

hi, I’m experimenting using apple sauce instead of sugar (Monk fruit if not pure contains erythritol which is linked to heart disease)…have you tried this or have any recommendations?…thanks Mike

Could I use Honey or coconut sugar?

I don’t think those would work well, but you can sub monk fruit! It should be a granulated white sugar type for the correct outcome.
