It’s soup season and you’re not going to want to miss the recipe for this Apple Butternut Squash Soup. I made it for some friends for a lunch and they both requested the recipe and made it the following week! It’s basically like a nourishing bowl of comfort with a touch of sweet. Plus, it’s Whole30 and can be vegetarian when made with veggie broth and sans bacon.

Apple Butternut Squash Soup

Cozy into fall with a comforting bowl of this sweet yet savory Apple Butternut Squash Soup that requires minimal effort and packs big flavor. Not only is it comforting and filling, but it’s also fully nutritious with seasonal produce and herbs. Plus, the most work you’ll do is peel and chop the butternut squash, which I honestly find somewhat therapeutic. Don’t knock it ’till you try it.

There’s nothing better than prepping a handful of ingredients and throwing them into a slow cooker to be blended and ready to eat in three hours. Then having leftovers to reheat throughout the week? Slow cooker season is my favorite!

DIETARY NOTES

This recipe is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:

  • gluten free
  • grain free
  • soy free
  • refined sugar free
  • egg free
  • nut free (using dairy milk)
  • dairy free (using nut milk)
  • Whole30 (using compliant broth, milk and bacon)
  • paleo (using compliant broth, milk and bacon)
  • vegetarian (sub veggie broth; omit bacon)
  • vegan (sub veggie broth; omit bacon)
  • Plant Based Whole30 (sub veggie broth; omit bacon)

Make it your own!

While this soup is naturally free of dairy and gluten, you can easily make it vegetarian and vegan as well. All you need to do is swap the chicken broth for veggie and leave out the bacon topping! Also, if you prefer to use dairy over coconut, feel free to use whole milk heavy cream instead of nut milk.

Need a side of crunch with your soup? I bought an extra honey crisp apple and whipped up some grilled cheeses with some leftover bacon, thinly sliced apple, sharp white cheddar and buttery bread. It made for a perfect pairing with this soup!

Ingredients
  

Apple Butternut Squash Soup
  • 1 large apple (I use honey crisp)
  • 1 butternut squash (or 6 cups)
  • ½ sweet, white or yellow onion
  • 2 cloves garlic
  • 1 tsp sage, fresh
  • 1 tsp thyme, fresh
  • ¼ tsp cinnamon
  • 1 tsp salt
  • ¼ tsp pepper
  • 3 cups chicken broth/bone broth (I use Bonafide Provisions Bone Broth)
  • ¼ cup nut milk, of choice
Toppings (Optional)
  • sage, fresh
  • thyme, fresh
  • chopped bacon
  • coconut milk drizzle (full fat)

Equipment

  • Slow Cooker
  • Blender/Immersion Blender

Method
 

  1. Peel the butternut quash, then chop the squash into squares.
  2. Chop the rest of the ingredients aside from the toppings and place into a slow cooker. Cook on high for three hours or low for six.
  3. OPTIONAL: Chop bacon and cook in a skillet until crispy. Dry and set aside once done.
  4. OPTIONAL: Mix the butternut squash seeds with a drizzle of oil, salt and thyme, then roast at 400℉ for 10 minutes.
  5. Once the slow cooker cooking time is up, blend the soup by using an immersion blender or by transferring everything in the slow cooker into a blender. Blend until smooth.
  6. Spoon into bowls and top with bacon, thyme, a drizzle of coconut milk and a few roasted butternut squash seeds!

    What a delicious soup! This has easily become one of our favorites. It is so flavorful and I love that all of the ingredients are real & clean! Roasting the butternut squash seeds and adding them to the top of the soup is genius. I wish those seeds were sold by the bag, they’re so yummy! My 3 year old also devoured his bowl! 🙂 yum!

    I would love to try this recipe but how would you cook this if you don’t have a slow cooker?

      On the stove is fine! Just cook until everything is soft enough to blend in the blender. 🙂

    A family favorite . Am making it for the third time round and decided to pop the seeds in the oven this time and they came out so nicely. Love butternut squash and the touch of apples is just a masterpiece, especially now during autumn and apples are falling of the trees.

    Loved this soup! Made it with the recipe ingredients exactly as they are here. I thought we’d have plenty for two meals for my husband and me. Wrong! My husband ate two large bowls snd I enjoyed one. Mine had all the toppings, including crispy sage leaves. He just slurped the soup. Thanks for a Valentine’s Day gift, Kayla!
