This Overdressed Greens Salad with Sweet Onion Dressing is easy to make but possibly the best salad I’ve ever had. The dressing is creamy and flavorful and coats all of the crispy, refreshing greens while being surrounded by fresh herbs, crunchy breadcrumbs, handfuls of shredded cheese and juicy heirloom tomato wedges. This is a salad for JOY.

It’s inspired by the salad at the Cleveland restaurant Cordelia that I haven’t stopped thinking about since I tried it.

Overdressed Greens Salad with Sweet Onion Dressing

What you’ll need:

  • Mayo
  • Sweet Onion
  • Garlic
  • Dijon Mustard
  • Apple Cider Vinegar
  • Honey
  • Salt & Pepper
  • Crispy Green Leaf Lettuce
  • Heirloom Tomato
  • Dill
  • Chives
  • Mozzarella or Havarti
  • Breadcrumbs
  • Avocado Oil

This recipe is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:

  • gluten free (using compliant breadcrumbs)
  • grain free (omitting or using compliant breadcrumbs)

  • refined sugar free (using compliant breadcrumbs)

Overdressed Greens Salad with Sweet Onion Dressing

Ingredients
  

Sweet Onion Dressing
  • 1 cup mayo (I use avocado oil mayo)
  • 1 cup sweet or yellow onion, cubed
  • 1-2 cloves garlic (more or less depending on preference)
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • salt & pepper, to taste
Overdressed Greens Salad
  • 4 ½ oz crispy green leaf lettuce
  • 1 heirloom tomato, cut into big pieces
  • 1 tbsp fresh dill
  • 1 tbsp fresh chives
  • 1-2 cups shredded mozzarella or havarti cheese (can use any soft white shredded cheese or a mixture of multiple)
  • 1 cup breadcrumbs, toasted (I use Jeff Nathan Creations)

Equipment

  • Blender

Method
 

Sweet Onion Dressing
  1. Combine all dressing ingredients in a blender and blend until fully smooth. Refrigerate until ready to use.
Overdressed Greens Salad
  1. Note that this is really a salad that you measure with your heart! Feel free to adjust measurements of the salad components based on your preferences.
  2. Also note to assemble the salad right before serving to keep the greens crisp and ingredients fresh.
  3. Toast breadcrumbs for a few minutes on the stove with a drizzle of avocado oil. Toss until golden and crunchy.
  4. Add lettuce to a large bowl and pour on as much dressing as you'd like to use. Toss to completely and evenly cover each piece of lettuce.
  5. Sprinkle in the dill and chives and toss again to evenly distribute.
  6. Add in the tomato pieces as well as half of the cheese.
  7. Top the salad with the remaining cheese and finally, the breadcrumbs.
