A NOTE ON CALORIE COUNT, NUTRITIONAL INFO AND SERVING SIZES

Due to my past experiences, I do not include most of the above information within my recipes as it is unsafe for me to do so personally. While I try to share a rough estimate when it comes to the serving size, please note that it is very subjective as we all have different hunger levels both from person to person and even from meal to meal.

If any of the above information is important to you, I understand! We are all different and have various goals and needs. If you’d like, you are welcome to calculate the information needed based on the ingredients you use when making one of my recipes.

I hope you understand! This comes from a place of love and protection both for myself and others like me. If you ever have any questions, send me an Instagram message for the quickest response time! Thank you for being here!

Prep Time 10 minutes mins

Total Time 1 hour hr 20 minutes mins
Servings: 6 -8, or so
Ingredients Equipment Method

Ingredients

  • 1 tbsp olive oil
  • 3 lbs russet potatoes
  • 1 cup heavy cream
  • 1 cup sharp white cheddar cheese
  • 6 tbsp grated Parmesan
  • 1 tbsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp onion powder
  • 1 tbsp ground sage
  • 5 garlic cloves, minced
  • salt and pepper, to taste

Equipment

  • Mandolin
  • Rectangular Baking Dish

Method

  1. Preheat your oven to 375˚F.
  2. Grease a rectangular baking dish with olive oil.
  3. You can either peel your potatoes or leave the skin on, up to you! Using a mandolin, slice thin potato slices.
  4. In a large mixing bowl, combine cream, shredded cheese, garlic, salt, pepper and half the Parmesan.
  5. Add the sliced potatoes to the bowl and toss together until all potatoes are evenly coated.
  6. Take a stack of potatoes and line them up in the baking dish, keeping potatoes upright but slightly slanted. Repeat until all potatoes have been used. I like to create three rows of slanted potatoes.
  7. Evenly pour excess cream mixture over the potatoes, then cover with foil.
  8. Bake the covered potatoes for 40-45 minutes.
  9. Remove the potatoes from the oven, remove the foil, sprinkle the top with the remaining Parmesan and continue to bake for an additional 25-30 minutes or until potatoes are fork tender. NOTE: If you love cheese, you can also sprinkle on some additional shredded cheese if desired.
  10. Remove the potatoes from the oven and cool just slightly. Top with fresh finely diced herbs (if desired) and serve warm.

    5 stars
A huge hit with the family for thanksgiving! I was using an oven at a family member’s house and ended up overcooking this dish – and everyone still raved about it. The only change I made was to salt, pepper, and add spice to the potatoes themselves, prior to mixing them in with the cheese and cream…I feel like it disperses the spices more evenly, and to that end, I never measure the spices. It’s all just vibes. Otherwise did not change this recipe. I’ll make it again and might try experimenting with freezing it after baking!

Love vibes for seasoning! Ovens can be so finicky, but I’m glad it was still a hit. 🙂
