Herby Dressed Up Rotisserie Chicken

I love to make this Herby Dressed Up Rotisserie Chicken both for weeknights and for hosting occasions. It’s absolutely delicious and could not be easier while tasting (and looking) impressive! Plus, it’s made with just a handful of simple, real food ingredients.

Dressed Up Rotisserie Chicken

Herby Dressed Up Rotisserie Chicken

What you’ll need:

  • Garlic
  • Herbs de Provence 
  • Butter (can also use ghee, dairy free butter or sub for olive oil)
  • Olive Oil 
  • Salt
  • Pepper 
  • Rotisserie Chicken 
  • Carrots, Shallots & Potatoes

DIETARY NOTES

This recipe is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:

  • gluten free
  • grain free
  • dairy free (using dairy free butter or subbing for olive oil)
  • egg free
  • refined sugar free
  • paleo (using compliant ghee)

Dressed Up Rotisserie Chicken

Ingredients Method

Ingredients
  

  • 1 rotisserie chicken 
  • 2 cloves garlic, minced
  • 2 tbsp Herbs de Provence
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper 
  • carrots, shallot, potatoes (~3 cups or so)

Method
 

  1. Preheat your oven to 350℉ and line a baking sheet with parchment paper.
  2. Combine minced garlic, Herbs de Provence, melted butter, olive oil, salt and pepper and mix until fully combined.
  3. Chop the carrots and potatoes and slice the shallot into bite sized pieces. Place in a large bowl.
  4. Coat the veggies in half of the dressing mixture and toss until evenly combined.
  5. Bake the veggies for 30 minutes.
  6. After 30 minutes, remove the veggies from the oven and make a spot in the center of the tray for your chicken.
  7. With the chicken in the center, use the rest of the dressing mixture to coat the chicken.
  8. Bake for an additional 20 minutes (or until potatoes are fork tender).
  9. Plate the chicken with the veggies surrounding it and enjoy!
