I make this Maple Dijon Roasted Chicken & Veggies meal whenever I cannot be bothered to spend a lot of time in the kitchen, but I still want something healthy, balanced and flavorful. If you relate, look no further because this easy sheet pan meal tastes and looks like restaurant quality but requires 0 cooking skills and just 30 minutes.

Maple Dijon Roasted Chicken & Veggies
Sometimes quick sacrifices flavor or nutrients, but thankfully this recipe is an exception and I’m here to show you how easy it can be to eat a fancy feeling, delicious tasting meal with little to no prep.
How? We’re using a rotisserie chicken and pre-prepped veggies (I love Taylor Farms and was lucky enough to partner with them on this recipe on social media!) so we can take our ingredients right from the bag to the baking sheet.
I have been making this meal nonstop lately because it’s fueling, it’s quick, and quite honestly, nothing makes me feel like I have my life together more than a gorgeous homemade dinner, like this one. Plus, it’s versatile and even reheats well for leftovers throughout the week.

Maple Dijon Roasted Chicken & Veggies
Ingredients
Maple Dijon Dressing/Marinade
- ¼ cup apple cider vinegar
- ½ cup extra virgin olive oil
- 1 tbsp dijon mustard
- 2 tbsp pure maple syrup
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
Chicken & Veggies
- 1 rotisserie chicken (can sub 3-4 chicken breasts)
- 2 cups brussels sprouts, halved
- 2 cups cauliflower florets
- 1 sweet onion, sliced
Instructions
- Preheat your oven to 350°F.
- Prepare the dressing by whisking together all of the ingredients in a bowl or by shaking them in a mason jar with a lid.
- Place rotisserie chicken (or chicken breasts) in the center of a rimmed backing sheet with parchment paper, then surround the chicken with the veggies.
- Pour half of the dressing/marinade over the chicken and the veggies. Use your hands to ensure that everything is evenly coated and that the veggies are spaced out so that they can cook properly without getting soggy.
- Bake for 25 minutes or until veggies are fork tender and the rotisserie chicken is re-crisped (or the chicken breasts are cooked).
- Pour remaining dressing over the veggies and chicken and enjoy warm!

To make this Whole30 compliant I subbed the maple syrup for two dates, finely chopped. The dates were delicious little bites mixed in with the roasted vegetables!
