This Vanilla Prosecco Berry Cake with homemade buttercream is quite honestly the very best cake I’ve ever had, let alone made! It sounds fancy, but it’s actually so easy to make, as we are enhancing a vanilla/yellow boxed cake mix with a special syrup, silky frosting and fresh berries. You can trust me on this because I am not the most skilled baker and cake is probably my favorite food ever. You’re going to love this!

Vanilla Prosecco Berry Cake

While I hope to have the perfect vanilla cake recipe of my own some day, for now I’m all about dressing up boxed cake mixes. When I tell you that this cake tasted better than anything I’ve ever gotten from a bakery… I truly mean it. My whole family was blown away! I served it at a dinner party and after everyone had a slice, we all just used our forks to eat the rest right off of the cake stand. Not a single crumb made it to the next day! Plus, I typically prefer chocolate cake, but this cake has changed everything for me.

Sorry to ramble, but you absolutely have to try it! It would be perfect for so many occasions from birthdays to bridal showers to New Years Eve… I can’t wait to make this all throughout the year! And luckily, it’s easy to do.

What you’ll need:

  • Prosecco
  • Sugar
  • Butter
  • Salt
  • Powdered Sugar
  • Cream (I use nutpods, click here)
  • Vanilla Extract
  • Vanilla Cake Mix (I use this one, click here)
  • Berries
  • Flowers, for garnish (optional, but beautiful!)

Things to note:

  • You can use whatever vanilla or yellow cake mix you want!
  • Feel free to use dairy ingredients in the buttercream if dairy doesn’t bother you, but the way I made it was fully dairy free and vegan and everyone loved it!
  • You can make the cake a day ahead to save time if needed.
  • We had great luck keeping the frosted cake in the fridge overnight before serving it, in case you need to do that!
  • To keep this paleo, use a compliant ingredients such as: cake mix, powdered sugar, cream and butter while also omitting the Prosecco syrup.
  • The Prosecco syrup is completely optional but adds a lot!

I made it to be free from gluten and dairy, and it can also fit into other dietary needs as needed based on the ingredients you choose. Ingredients Method Notes

Ingredients
  

Buttercream Icing
  • ½ cup butter (I use vegan butter)
  • pinch salt
  • 3 cups powdered sugar
  • 3 tbsp cream (I use nutpods)
  • 2 tsp vanilla extract
Prosecco Syrup
  • 1 cup Prosecco
  • ¼ cup sugar
Vanilla Prosecco Berry Cake
  • 1 vanilla or yellow boxed cake mix (I use King Arthur's)
  • ½ cup Prosecco syrup, separated
  • buttercream icing
Garnishes:
  • berries
  • flowers

Method
 

Buttercream Icing
  1. Whip room temperature butter on medium speed until creamy and smooth.
  2. Add the salt and powdered sugar, one cup at a time, thoroughly mixing in the powdered sugar with each addition.
  3. Pour in the cream 1 tbsp at a time and whip for 20-30 seconds each time. 
  4. Add the vanilla extract and mix on medium-high until fully mixed and thick.
Prosecco Syrup
  1. Combine the Prosecco and the sugar in a pot over medium heat, stirring until sugar is completely dissolved.
  2. Once dissolved and reduced (thickened in consistency) slightly, remove the syrup from the heat to cool completely.
Vanilla Prosecco Berry Cake
  1. Make the cake batter according to the box instructions.
  2. Bake in two circular baking pans.
  3. Once fully cool, drizzle 2 tbsp of the Prosecco syrup over the top and the bottom of both cakes.
  4. Place the cakes in the fridge to cool and so that the syrup can absorb.
  5. Carefully frost the first layer of your cake with half of the buttercream, then sprinkle on a layer of fresh berries.
  6. Place the second layer of cake on top of the berries and use the remaining buttercream to carefully frost the top of the cake.
  7. Finish the cake by decorating the top with more fresh berries and flowers, if you have them on hand!

Notes

We had really good results with this cake being kept in the fridge until it was time to serve!
Keep the recipe fully gluten free and dairy free using a gluten free cake mix, vegan butter and nutpods.

      I would opt for a alcohol removed sparkling “wine” or just make a simple syrup or omit completely!

          Simply leave off the prosecco or opt for an alcohol removed option! Or instead of prosecco syrup just make a simple syrup. You can even infuse it with fruit of your choice!

    I made this cake for Eater last year and making it again this year! It’s perfect for Easter, Bridal Showers and Baby Showers. Light and moist with just enough frosting to really make it perfect!
