Broccoli Salad

July 30, 2020 by kaylaskitchandfix 4 Comments

Move over charcuterie boards, BBQ Boards are here to give you a run for your money. Made up from BBQ shredded chicken, creamy coleslaw, spiced sweet potato fries and crunchy Broccoli Salad, this board isn’t only delicious, but it’s also Whole30!

BBQ Board

Easy, healthy & delicious…

…the perfect combination! What I love about BBQ is that there is something for everyone and that it can be made healthy when using real and clean ingredients without compromising any of the flavor!

I took inspiration from one of our favorite BBQ spots in Chicago and recreated our tops side dish choices using healthy alternatives, like this Whole30 compliant BBQ sauce from The New Primal or this Whole30 approved avocado mayo from Primal Kitchen, to name a few.

BBQ Board dEATS:

BBQ Shredded Chicken:

  • 1 lb chicken breast
  • 1 tbsp avocado oil
  • ½ bottle The New Primal BBQ sauce

Cook all ingredients in a slow cooker for 3 hours on high, then shred.

Sweet Potato Fries:

  • 1 medium sweet potato
  • 1 tbsp avocado oil
  • paprika, garlic powder, onion powder, Italian seasoning, salt and pepper, to taste

Slice sweet potatoes into fries, coat with oil & seasonings, then bake in the oven at 400 for 40 minutes, flipping half way.

This broccoli salad is so so yummy! The perfect side for a picnic, bbq, or just any meal. The only con I would say is that I like the broccoli a little less raw, so I did steam mine a little. But of course that is ALL preference.

Good to hear it works well when steamed also! I love it raw for an extra crunch. 🙂
