These easy, healthy and delicious Chicken Tostadas are perfect for meal prepping for a busy week ahead and also make a great appetizer for a gathering where everyone can build their own. They are easy to customize to your taste preferences and dietary needs all while giving you a satisfying crunch with each bite.
Chicken Tostadas
I am not fully satisfied with my meal if there isn’t an audible crunch involved. These Chicken Tostadas definitely fill my craving with each bite! They are absolutely delicious, balanced and filling all while fueling my body with real, delicious food. Plus, there are so many ways you can make them your own to meet your needs!
DIETARY NOTES
This recipe is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:
- gluten free
- grain free (using compliant tortillas and no beans)
- soy free
- refined sugar free (using compliant tortillas, sauces, salsa and seasonings)
- dairy free (using compliant sauces)
- vegetarian (omitting chicken)

Chicken Tostadas
Equipment
- 1 Slow Cooker
Ingredients
- 1 lb chicken breast
- 1 packet taco seasoning (can sub ¼-½ cup salsa)
- 4 tortillas (I use almond flour tortillas)
Toppings (Optional)
- 1 can refried beans (can sub smashed avocado)
- shredded lettuce
- chopped tomatoes or salsa
- fresh cilantro
- sour cream or ranch (I use my ranch dressing recipe)
- diced or pickles onion (I use my pickled onions recipe)
Instructions
Shredded Chicken
- Combine chicken and choice of taco seasoning or salsa into a slow cooker.
- Cook the chicken on high for 3 hours or low for 6 hours.
- Once cooked, shred the chicken and mix together with the seasoning you chose to recombine the two.
Tostadas
- Preheat your oven to 375°F.
- Place tortillas on your baking sheet, spaced apart. Bake it for 10 minutes or until golden, creating a crunchy tostada, then set aside.
Chicken Tostadas
- On each tostada, spread on a thick layer of refried beans or avocado, then top with the chicken, lettuce, tomatoes or salsa, onions or pickled onions, sour cream or ranch and fresh cilantro. Note that you can use any toppings you like, these are just my favorite and the ones shown in this recipe!
