Crispy Smashed Brussel Sprouts

Ingredients Equipment Method

Ingredients
  

Smashed Brussel Sprouts
  • 1 lb brussel sprouts (about 20 medium sized)
  • 1 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp 1 tsp onion powder
  • 1-2 tsp salt
  • ¼ tsp pepper
Garnishes (Optional)
  • chives, chopped
  • pomegranate seeds
  • maple bacon aioli (recipe below in this blog post)

Equipment

  • Wire Rack (optional but recommended)
  • Glass Jar

Method
 

Prep
  1. Add brussel sprouts to salted boiling water and cook for 10 minutes.
  2. Drain the brussel sprouts and allow to cool for 5 minutes.
  3. Over the sink, squeeze each brussel sprout dry with towel then add to a large bowl.
  4. Combine all ingredients and toss together until evenly coated.
  5. On a piece of parchment paper, smash each brussel sprout with a glass jar. The thinner the better!
Air Fryer
  1. At 350° F, bake brussel sprouts for 10 minutes.
  2. If you'd like them crispier, flip and bake for 5 more minutes.
  3. Remove from the air fryer and serve immediately with dipping sauce and pomegranate seeds (optional, but delicious!).
Oven
  1. Preheat oven to 425°.
  2. On a baking sheet with a wire rack on top (or with parchment paper if you don't have a wire rack), spread out the brussel sprouts.
  3. Bake for 25-30 minutes, checking on them to ensure they don't burn. The bake time will depend on the size, so if they're smaller they will require less time.
  4. Remove from the oven and serve immediately with dipping sauce and pomegranate seeds (optional, but delicious!).

Ingredients
  

  • ⅓ cup avocado mayo
  • squeeze lemon
  • 1 tsp garlic powder
  • 4 strips cooked sugar free bacon, chopped (optional, omit if vegan or vegetarian)
  • 1 tsp dijon mustard (check for paleo/Whole30 compliant ingredients)
  • 1 tbsp pure maple syrup (optional, omit if Whole30)
  • 1 tbsp chopped chives
  • pomegranate seeds, to garnish (optional)

Method
 

  1. Combine all ingredients together and mix until fully combined.

    I made this in the oven without a rack and it turned out great. Ate this with the mayo aioli all in one sitting. Did not use the bacon in the aioli out of laziness, still taste good.
