Gluten Free Brunch Flatbreads

Brunch flatbreads aka an excuse to eat pizza for breakfast (not that you need one, IMO).

These flatbreads are super versatile and easy to make. With just two ingredients in the crust, this is sure to be a crowd pleaser.

Ingredients Method

Ingredients
  

Crust
  • 2 egg whites
  • 2 cups almond flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
Toppings
  • shredded mozzarella
  • 1 tbsp melted ghee or olive oil
  • chopped onion
  • chopped artichoke heart
  • prosciutto
  • brussels sprouts
  • cracked black pepper
  • minced garlic

Method
 

  1. Preheat oven to 325° and line a baking sheet with parchment paper.
  2. Combine almond flour, egg whites and seasonings and combine until fully mixed. The dough should start to form into balls.
  3. Use your hands to form the dough into a ball, then separate into even fourths.
  4. Form the dough into heart shapes or circles and place on the lined sheet.
  5. Bake for 10 minutes, then remove from the oven and turn to broil at 500 degrees.
  6. Spread the ghee or olive oil and garlic evenly over each flatbread. This acts as the sauce.
  7. Assemble the flatbreads with your toppings. I added half of the cheese first, then the rest of the toppings, then used the rest of the cheese over the top.
  8. Broil for 5 minutes then remove from the oven and top with cracked black pepper.
