This Easy Coconut Cookies and Cream Ice Cream is made with simple ingredients and is just as fun to make as it is delicious! With the warmer weather, it’s inevitable that we’ll all be craving an ever classic and super nostalgic ice cream cone to cool down with and satisfy your sweet tooth, but what if I told you that you can easily make your own at home while using better for you ingredients? Well, you can, and it’s actually super easy!

Easy Coconut Cookies and Cream Ice Cream

Who doesn’t love cookies and cream ice cream? It’s such a highly loved flavor and now you can make it at home to enjoy for yourself or with a group! It’s as easy as it is fun and is made with ingredients you can recognize, so you can feel good about digging in! You don’t even need an ice cream maker, just a blender and a few simple ingredients!

What You’ll Need

While this recipe doesn’t require many ingredients and hardly any effort, it does require a bit of time to freeze. If you plan to make this, you’ll want to start two days ahead of time by popping your loaf tin in the freezer to chill as well as allowing for a day (8-12 hours) to freeze thoroughly.

Cookies and Cream Ice Cream

In terms of ingredients, here is what you’ll need:

  • Coconut milk or cream (coconut cream helps thicken the ice cream a bit, but both will work)
  • Monk fruit sweetener (for lower sugar) or regular sugar
  • Maple syrup
  • Vanilla extract
  • Cashew butter
  • Salt
  • LesserEvil Fudge Brownie Cookies (or cookies/topping of your choice)

For the cookies, I used LesserEvil’s Fudge Brownie Cookies to make the perfect crumbles that make this recipe taste like the flavor we all grew up loving! They are super delicious all on their own as well and are free from gluten while being made from better for you ingredients. You can use whatever cookie you’d like though to make this recipe free from dairy, gluten or whatever you need! You can also swap the cookies for your favorite ice cream pairing if you so wish.

Coconut Cookies and Cream Ice Cream

Ingredients
  

  • 2 cans coconut milk or coconut cream, chilled
  • ¼ cup monk fruit sweetener (I use Lakanto, can sub sugar of choice)
  • ¼ cup maple syrup
  • 1 tbsp vanilla extract
  • ½ cup cashew butter
  • pinch salt
  • 1 box LesserEvil Fudge Brownie Cookies, split into two portions (Can sub cookies/topping of choice)

Equipment

  • Blender
  • Loaf Tin

Method
 

  1. Freeze a loaf in overnight.
  2. Blend all of your ingredients aside from the LesserEvil Fudge Brownie Cookies (or cookie of choice) until smooth.
  3. Add in half of the box of cookies and blend again until the cookie pieces are spread around evenly.
  4. Pour the blender contents into the chilled loaf tin, then break up the remaining cookies over the top.
  5. Use a spoon to stir in the cookie pieces and cover the tin in foil.
  6. Allow the ice cream to freeze overnight to completely harden.
  7. When you’re ready to enjoy the ice cream, let it sit out of the freezer until soft enough to scoop.
