This easy and creamy 5 Minute Vegan Cashew “Queso” is made with just a few simple ingredients and no, you don’t need to soak your cashews overnight. It’s perfect for a dip or as a sauce as a cheesy alternative. Plus, it fits into more dietary needs than the number of minutes it takes to whip up.
5 Minute Vegan Cashew “Queso”
This easy and delicious appetizer/sauce/dip/whatever you want to make it is so quick to make and you won’t believe it’s dairy free and vegan too. Instead of soaking the cashews overnight, we use hot water here to make this recipe as quick and low fuss as possible. Plus, you only need a few pantry staples to throw this together. It’s the best!

You can absolutely customize this recipe to make it fit your preferences! Do so by topping it with all of your favorite queso or dip garnishes to add in the flavors of your choice. Also, if you eat meat, you could definitely add in some chorizo or protein of choice to make it more filling!
While I made this recipe with the intent of it being a dip or appetizer, it would also be delicious on taco bowls or burger bowls! I can’t wait to see how you incorporate this recipe into your kitchens!

5 Minute Vegan Cashew “Queso”
Equipment
- Food Processor
Ingredients
- ¾ cup hot water or veggie broth
- 1 cup raw cashews
- 1-2 cloves garlic
- ¼ cup nutritional yeast
- ½ tsp paprika
- ¼ tsp chili powder
- salt, to taste
Instructions
- Heat water in the microwave for 45 seconds.
- In a food processor or blender, combine all ingredients and blend until smooth.
- Taste and adjust the spices as needed (more chili powder for more spice, more salt as preferred, etc.)
- Top with desired toppings such as: diced bell pepper, diced red onion, jalapeño slices, fresh cilantro, cracked black pepper, whatever you like best. Enjoy right away!
